It seems that this new version is a little heavier on resources than the prior 6.x version. Does that have anything to do with the two Processes it loads at startup? I've noticed that it's running two: MailWasherpro.exe and MailWasherProApp.exe. I assume both of these need to run all the time in order to function properly. Is that correct?

The heavier resource usage is more to do with MailWasher using .NET.

Yes. Both these process are required. MailWasherPro.exe is the user interface. MailWasherProApp.exe is the engine that does all the work. There's more information here.
